Welcome to Mercury

Mercury is a contemporary mid-century cocktail lounge, serving late-night food with an extensive selection of wine. We sometimes play 80s yacht rock.

Clinebell ice machine

Our Clinebell ice machine uses single-direction freezing to produce flawless 300-lb. blocks of ice. By only freezing from the bottom and using a pump to circulate the water as it freezes, all of the air and impurities in the water are left out of the ice. This results in a 10” x 20” x 40” block you can read through. We then take that block, hit it with a chainsaw, and hand-carve every large ice cubes that come in any of our drinks on the rocks.

This ice is peerless, and this is the only Clinebell between Denver and Minneapolis.

Originally from Baltimore, Clark relocated to Omaha in 2011. After running bar programs for 10 years, he focused on opening up his own shop. He blends his dive bar and fine dining experience to form a comfortable but competent bar.

Certified from The Court of Master Sommeliers, Sara manages the Mercury wine cellar. She also lends her sharp service ability to the dining room to ensure the best experience possible.

Tony Knotek


Tony’s dedication to bringing joy and togetherness to his friends and family stem from him growing up cooking with his father. His first food loves include foods from his Eastern European heritage: goulash and stroganoff. Through his career, he has found a love in blending traditional dishes with modern twists.

Phil Athy


Phil Athy


An Iowa native, Phil has been on opening teams for dedicated whiskey bars as well as been head bartender of bars with established cocktail programs. While he possesses a deep knowledge of bourbon and scotch, the ability to improve people’s day in small but meaningful ways keeps Phil bartending.

Alex Shaddy


Alex has been working in food and beverage his entire adult life. Whether it was a late-night food truck or in the city’s leading fine dining kitchen, he loves having an outlet for his artistic leanings. Bringing that passion from the kitchen into the bar, he is new to the cocktail scene. His discipline and desire have catapulted him to join the ranks of the finest bartenders in the city.
